Delicious Banana Bread (with Chocolate Chips!)

The Story

I haven't met anyone who doesn't like banana bread. It's delicious, and SO easy to make! I recently taught my non-baker boyfriend to make it (one of our Quarantine 2020 projects) and he can't get enough. He asks when we can make more before we've finished the most recent loaf.

Ingredients


  • 1/4 cup (~57 grams) unsalted butter, room temperature
  • 1/2 cup (125 grams) applesauce (Apfelmus)
  • 1/2 cup (100 grams) white sugar (Zucker)
  • 1/4 cup (50 grams) packed brown sugar (Rohrzucker)
  • 2 eggs (Eier)
  • 4 small ripe bananas or 3 medium
  • 1 1/2 cups (~156 grams) flour (Mehl)
  • 1 teaspoon baking soda (Natron)
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (Zimt)
  • 1/2 teaspoon vanilla
  • 2/3 cup (130 grams) chocolate chips (Schokotropfen)


Instructions

  1. Preheat oven to 350*F (175*C)
  2. In a medium bowl, mash the bananas into a cream (some lumps are okay)
  3. In a large mixing bowl cream together butter, applesauce and sugars. Add in the mashed bananas and eggs.
  4. Stir well.
  5. Sift together flour, baking soda, salt and cinnamon. Stir into creamed mixture. Add vanilla. Mix well but don't over-mix. Stir in chocolate chips.
  6. Pour into greased and floured standard sized bread pan (about 9x5 inches or 20x35 centimetres) or line your bread pan with parchment paper and grease the parchment paper. (This allows for easiest removal from the pan.)
  7. Bake for 50-60 minutes or until a toothpick inserted in the middle comes out clean. Place the pan on a wire rack. Let it cool for 15 minutes. Remove the bread from the pan to a wire rack to finish cooling.
