London Fog Shortbread Cookies

The Story

What is a "London Fog"? It's an Earl Grey tea latte with vanilla, and it's delicious. It makes a grey, cold, rainy day better. Ask for one on your next trip to Starbucks; most baristas know how to make it. (Or ask for "a grande Earl Grey tea latte with 2 pumps of vanilla") Here, we have a new take on an old classic: shortbread. This pairs well with a soothing black tea to calm those nerves after a busy day at the office.

Ingredients

  • 1 cup (225g) butter
  • 2/3 cup (85g) powdered sugar
  • 1 3/4 cup (220g) flour
  • 2 tsp vanilla
  • 1 vanilla bean split and scraped (or 1 tbsp vanilla bean paste)
  • 2 tbsp Earl Grey Tea leaves

Instructions


  1. Preheat the oven to 350*F, roll dough to 1/4”.
  2. Cream butter and sugar with an electric mixer.
  3. Add vanillas and tea leaves. Mix.
  4. Add flour, mix well.
  5. Wrap dough in plastic wrap. Chill for at least 30 minutes.
  6. Roll out the dough, and cut out shapes. Place on parchment lined baking sheets. Chill again, for at least 20 minutes before baking.
  7. Bake 12 minutes. Cool on wire racks.
