Mexican Wedding Cookies (a holiday favorite!)

The Story

Christmas time at the Miller house always means cookies. And what cookie would be better than a cookie that looks like a snowball? Answer: There aren't any.


Ingredients


  • 1 cup (225g) butter
  • 1/2 cup (115g) white sugar 
  • 2 tsp vanilla extract
  • 2 tsp water
  • 2 cups (250g) flour 
  • 1 cup (115g) chopped almonds *I often do half a cup of chopped almonds and half a cup of almond powder
  • 1/2 cup (90g) powdered sugar
  • Optional: 2 tsp cinnamon


Instructions


  1. In a medium bowl, cream the butter and sugar. Stir in vanilla and water. Add flour and almonds, mix until blended. Cover and chill in the refrigerator for about 3 hours.
  2. Pre-heat the oven to 325*F (160*C)
  3. Shape the dough into balls. Place on an ungreased cookie sheet (or on baking paper) and bake for 15-18 minutes.
  4. While they are baking, mix the powdered sugar (and cinnamon, if desired) in a small bowl.
  5. Remove the cookies and let them cool on a wire rack. When they are cool enough to touch, roll them in the powdered sugar mixture.
  6. Place them back on the rack to finish cooling.
