Pizzelles

The Story

Another Christmas holiday favorite because they always looked like snowflakes to us. My mother and I would spend an entire afternoon making different kinds of pizzelles. Our favorites? Almond, cinnamon, and rum. (You can add some sprinkles to the powdered sugar to color-coordinate them so you know which flavor is which).




Ingredients

  • a pizzelle or waffle cone maker
  • 3 eggs
  • 3/4 cup (150g) sugar
  • 3/4 cup (180g) melted oleo or butter
  • 1 1/2 (~188g) cup flour
  • 1 tsp baking powder
  • 2 tsp vanilla
  • 1 tsp almond extract*
  • Optional: 1/2 cup powdered sugar
  • Optional: different colors of sugar sprinkles

*You can substitute other extracts: peppermint, cinnamon, vanilla, lavender, lemon, rum, anise, etc...

Instructions

  1. Beat the eggs until smooth. Add butter, then vanilla extract.
  2. In a separate bowl, sift together the flour, baking powder and sugar.
  3. Combine both the egg and dry mixtures, mix until smooth.
  4. Test that the mixture will fall easily (like a ribbon) from a teaspoon. If needed: add a few tablespoons of water to thin, or flour to thicken.
  5. Using a Pizzelle maker, drop a teapoon of dough in the middle and cook for about 30-45 seconds. Using a fork, remove the pizzelles from the iron and set on a plate or cooling rack.
  6. If desired, sprinkle pizzelles with powdered sugar and sugar sprinkles.
