The Story
Another Christmas holiday favorite because they always looked like snowflakes to us. My mother and I would spend an entire afternoon making different kinds of pizzelles. Our favorites? Almond, cinnamon, and rum. (You can add some sprinkles to the powdered sugar to color-coordinate them so you know which flavor is which).
Ingredients
- a pizzelle or waffle cone maker
- 3 eggs
- 3/4 cup (150g) sugar
- 3/4 cup (180g) melted oleo or butter
- 1 1/2 (~188g) cup flour
- 1 tsp baking powder
- 2 tsp vanilla
- 1 tsp almond extract*
- Optional: 1/2 cup powdered sugar
- Optional: different colors of sugar sprinkles
*You can substitute other extracts: peppermint, cinnamon, vanilla, lavender, lemon, rum, anise, etc...
Instructions
- Beat the eggs until smooth. Add butter, then vanilla extract.
- In a separate bowl, sift together the flour, baking powder and sugar.
- Combine both the egg and dry mixtures, mix until smooth.
- Test that the mixture will fall easily (like a ribbon) from a teaspoon. If needed: add a few tablespoons of water to thin, or flour to thicken.
- Using a Pizzelle maker, drop a teapoon of dough in the middle and cook for about 30-45 seconds. Using a fork, remove the pizzelles from the iron and set on a plate or cooling rack.
- If desired, sprinkle pizzelles with powdered sugar and sugar sprinkles.
